This simple and healthy salad is a favorite!
With only a small handful of ingredients, it has a fresh clean taste and takes only minutes to prepare.
Cucumbers are an excellent source of silica, a trace mineral that contributes to the health of connective tissue, Vitamin C and Vitamin A offer antioxidant benefits, and Vitamin K contributes to healthy bone formation. Cucumber skin is rich in fiber and beneficial minerals but is often covered in wax or harmful pesticides. If the cucumber is not organically grown it should be peeled.
Avocados contain natural “good fats” that help the body to absorb antioxidant carotenoids, such as the lycopene contained in the Tomato. Lycopene is known to reduce inflammation.
Ingredients:
- ½ cup cherry tomatoes cut in half
- ½ cup diced English cucumbers
- ½ avocado diced
- 1 garlic clove diced
- ½ cup protein of choice (diced chicken, turkey, salmon, tuna, garbanzo beans, nuts, tempeh)
- Juice from ½ lemon
- Olive oil
- Vinegar (Red Wine Vinegar or Apple Cider Vinegar work well)
- Himalayan Salt
- Pepper
- Cilantro (optional)
Directions:
Toss first five ingredients together in a salad bowl. Sprinkle with Himalayan sea salt and black pepper. Add juice from ½ lemon, a dash of vinegar and drizzle of olive oil. If desired, add cilantro and toss again.
Single serving.

When she is not practicing law or teaching Pilates, she can be found hiking or biking in the woods, soaking up the sun atop her paddleboard, engaged in a yoga or group fitness class, or immersed in a book or classic movie.
