When you need a quick pick-me-up!
This is a quick and easy recipe that can be enjoyed as a light breakfast or anytime snack when you need a quick pick-me-up. The apples are loaded with beneficial phytonutrients and are a great source of Vitamin C, potassium and fiber. Be sure to use organic apples and don’t peel them as most of the apple’s nutrients are contained in the skin.
The walnuts are packed with omega-3 fatty acids and antioxidants and the raisins are a good source of natural sugar to provide a quick boost of energy in the morning or mid-afternoon. Raisins also contain resveratrol, a phytochemical compound that has been shown to have anti-inflammatory and anti-cancer properties.
Cinnamon is a powerful antioxidant and the raw honey and lemon juice blend is a delicious compliment the sweetness of this salad.
Ingredients:
- 1 medium sized apple
- ¼ teaspoon cinnamon
- 1 tablespoon chopped walnuts
- 1 tablespoon raisins
- 1 teaspoon raw honey
- 1 teaspoon lemon juice
Directions:
Cut apple into bite-sized cubes. Sprinkle with cinnamon. Top with walnuts and raisins. In a small bowl, whisk together honey and lemon juice and drizzle over salad.
For a crisp and refreshing snack serve cold. For a more “apple pie” like taste and texture serve warm.
